Parisian dreaming..

So, I found out this blog: http://ohhappyday.com/2011/06/goes-to-paris is giving away a trip for 2 to go to Paris.... that'd just be too perfect of a present.  Plus, my boyfriend hasn't ever been to Europe! Keep your fingers crossed! More recipes to come soon!



Benedict Arnold

Sometimes when life is tough and there are just too many classes to study for, a hearty breakfast is in order to get you through the day.  I'm starting to think I need to make eggs benedict every. single. day. Then again, it is dead week.  That's right dead week.  It just sounds ominous.  It's the week before finals, the calm before the storm where everyone starts looking around helplessly wondering where the semester went.  There are a couple things that every student at OU has to know about dead week.  First off, dead week is supposed to be a relaxing week in theory without any assignments due or tests to prepare for.  Wrong! Here at OU, the professors prefer to keep the pace rolling with assignments and tests galore. Second, dead week should most likely be renamed cram everything you have ever learned into your brain in a week week.  So overall, besides the feeling you get during dead week, the name is quite deceiving.  But let's get to the good part shall we? A tasty breakfast can really help propel you through the week of death as well as the finals that follow it.  I prefer something creamy and delicious, like Eggs Benedict.  It is so easy to make(assuming you have an egg poacher or extreme skill) and you'll look like a professional chef when you serve it!


I made this dish for my boyfriend, Chris, who will so kindly try anything I put on a plate in front of him.  Luckily, it hasn't been a danger to his health yet; however, he does have a full summer of my cooking in store for him!

The basics of this dish are as follows:
eggs
sausage (you can use Canadian bacon, but sausage adds a great texture and holds it all together really nicely)
english muffins
hollandaise sauce (homemade or packaged)

1. Cook the sausage in a skillet--set aside until ready to assemble the plate.
2. Prepare the hollandaise as directed and keep on extremely low heat until the rest of the dish is ready.  If it cools and is reheated too quickly the eggs will separate and you are left with a not so tasty, globby mess.
3. Ok, here's the hard part... poaching the eggs. If you have an egg poacher, it's actually quite easy.  Just fill the lower half of the pan with water(this is actually what cooks the eggs) and spray the poaching bowls with Pam.  Put one full egg in each bowl and cook covered for approximately 4 minutes. If you don't have an egg poacher, you can cook them in a skillet or saucepan.  Add about an inch of water and a teaspoon of either vinegar or lemon juice if using a skillet and bring to a boil.  Once boiling, add the eggs, remove the skillet from heat and cover for around 7 minutes for 4 eggs.
4. While the eggs are cooking, toast the english muffins.  Once everything is cooked, assemble the breakfast sandwich and cover with hollandaise sauce!
